Main Ingredients
- 2 medium zucchini sliced into thin rounds
- 1 cup bread crumbs preferably panko
- ½ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 large eggs beaten
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine bread crumbs, Parmesan cheese, garlic powder, salt, and pepper.
Dip zucchini slices into beaten eggs, then coat with the bread crumb mixture.
Place coated zucchini slices on the prepared baking sheet.
Bake for 25-30 minutes, or until golden and crispy. Serve immediately.
