Main Ingredients
- ½ cup uncooked rice preferably short-grain
- 4 cups milk whole milk for creaminess
- ½ cup sugar
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 2 eggs beaten
- ½ cup raisins optional
Preheat oven to 350°F (175°C).
In a medium saucepan, cook the rice according to package instructions.
In a large mixing bowl, combine cooked rice, milk, sugar, vanilla extract, cinnamon, and salt.
Beat the eggs and add them to the mixture, stirring well.
Fold in raisins if using.
Pour the mixture into a greased baking dish.
Bake for 90 minutes, or until the pudding is set and lightly browned on top.
Let cool slightly before serving.
