Ingredients

  • 1 quart Vanilla Ice Cream
  • 1 pound Pound Cake sliced
  • 4 Egg Whites
  • 1 cup Sugar
  • 1 teaspoon Vanilla Extract

Instructions 

  1. Preheat your oven to 500°F (260°C).
  2. Line a baking sheet with parchment paper and place the pound cake slices on it.
  3. Top the cake slices with scoops of vanilla ice cream. Place in the freezer to firm up.
  4. In a mixing bowl, whisk the egg whites until soft peaks form. Gradually add sugar and vanilla extract, whisking until stiff peaks form.
  5. Remove the cake and ice cream from the freezer. Cover each with meringue, sealing all edges.
  6. Bake in the preheated oven for 3-5 minutes, or until the meringue is golden brown. Serve immediately.
