Ingredients 

Main Ingredients

  • 2 large Eggplants Roasted
  • 2 tablespoon Oil
  • 1 large Onion Chopped
  • 2 large Tomatoes Chopped
  • 4 cloves Garlic Minced
  • 1 inch Ginger Minced
  • 2 teaspoon Cumin Seeds
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Red Chili Powder
  • 1 teaspoon Garam Masala
  • to taste Salt
  • 2 tablespoon Cilantro Chopped

Instructions 

  1. 1. Roast the eggplants over an open flame until the skin is charred and the flesh is soft.
  2. 2. Let the eggplants cool, then peel off the charred skin and mash the flesh.
  3. 3. Heat oil in a pan, add cumin seeds, and let them splutter.
  4. 4. Add chopped onions, garlic, and ginger. Sauté until golden brown.
  5. 5. Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until tomatoes are soft.
  6. 6. Add the mashed eggplant and mix well. Cook for another 10 minutes.
  7. 7. Sprinkle garam masala and chopped cilantro. Mix well and serve hot.
