Avocado Toast with Poached Egg
A simple, delicious breakfast or brunch option featuring creamy avocado and a perfectly poached egg on toast.

Main Ingredients
- 2 slices Bread whole grain or sourdough
- 1 Avocado ripe, mashed
- 2 Eggs large
- to taste Salt and Pepper
- 1 tablespoon Vinegar for poaching
Toast the bread slices to your liking.
Spread the mashed avocado evenly on each slice of toast.
Bring a saucepan of water to a gentle simmer and add the vinegar.
Crack each egg into a small bowl, then gently slide into the simmering water. Poach for 3-4 minutes until whites are set but yolks are still runny.
Remove eggs with a slotted spoon and place on top of the avocado toast.
Season with salt and pepper to taste. Serve immediately.
