  • 2 slices Bread whole grain or sourdough
  • 1 Avocado ripe, mashed
  • 2 Eggs large
  • to taste Salt and Pepper
  • 1 tablespoon Vinegar for poaching

Instructions 

  1. Toast the bread slices to your liking.
  2. Spread the mashed avocado evenly on each slice of toast.
  3. Bring a saucepan of water to a gentle simmer and add the vinegar.
  4. Crack each egg into a small bowl, then gently slide into the simmering water. Poach for 3-4 minutes until whites are set but yolks are still runny.
  5. Remove eggs with a slotted spoon and place on top of the avocado toast.
  6. Season with salt and pepper to taste. Serve immediately.
