Ingredients

  • 2 cups Pasta cooked and cooled
  • 2 Avocados diced
  • 1 cup Cherry Tomatoes halved
  • ¼ cup Red Onion finely chopped
  • ¼ cup Cilantro chopped
  • 2 tablespoon Lime Juice freshly squeezed
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper freshly ground

Instructions 

  1. 1. Cook the pasta according to package instructions. Drain and let it cool.
  2. 2. In a large mixing bowl, combine the cooked pasta, diced avocados, cherry tomatoes, red onion, and cilantro.
  3. 3. In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
  4. 4. Pour the dressing over the pasta mixture and toss gently to combine.
  5. 5. Serve immediately or refrigerate for up to 2 hours before serving.
