Ingredients 

Crust

  • 1 ½ cups graham cracker crumbs
  • ¼ cup melted butter

Filling

  • 3 ripe avocados
  • 2 packages cream cheese, softened 16 oz total
  • 1 cup sugar
  • 3 large eggs
  • ¼ cup fresh lime juice
  • 1 tablespoon lime zest
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. Blend avocados until smooth. Add cream cheese, sugar, and blend until smooth.
  4. Add eggs one at a time, blending after each. Mix in lime juice, zest, and vanilla.
  5. Pour mixture over crust. Bake for 1 hour or until set.
  6. Let cool, then refrigerate for at least 4 hours before serving.
