Avocado Lime Cheesecake
A creamy, tangy cheesecake with a twist of avocado and lime.

Crust
- 1 ½ cups graham cracker crumbs
- ¼ cup melted butter
Filling
- 3 ripe avocados
- 2 packages cream cheese, softened 16 oz total
- 1 cup sugar
- 3 large eggs
- ¼ cup fresh lime juice
- 1 tablespoon lime zest
- 1 teaspoon vanilla extract
Preheat oven to 325°F (163°C).
Mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
Blend avocados until smooth. Add cream cheese, sugar, and blend until smooth.
Add eggs one at a time, blending after each. Mix in lime juice, zest, and vanilla.
Pour mixture over crust. Bake for 1 hour or until set.
Let cool, then refrigerate for at least 4 hours before serving.
