  • 1 Red Onion small, finely chopped
  • 1 cup Cherry Tomatoes halved
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black Pepper to taste

Instructions 

  1. In a large mixing bowl, combine chickpeas, avocados, red onion, and cherry tomatoes.
  2. Drizzle with olive oil and lemon juice. Season with salt and black pepper.
