Ingredients 

Crust

  • 1.5 cups Graham cracker crumbs
  • 0.5 cup Melted butter
  • 0.25 cup Sugar

Filling

  • 24 oz Cream cheese softened
  • 1 cup Sugar
  • 1 teaspoon Vanilla extract
  • 3 Eggs
  • 1 cup Pumpkin puree
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Ground ginger

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a springform pan.
  3. In another bowl, beat the cream cheese and sugar until smooth. Add vanilla extract and eggs one at a time, beating well after each addition.
  4. Stir in the pumpkin puree, cinnamon, nutmeg, and ginger until well combined.
  5. Pour the filling over the crust in the springform pan.
  6. Bake in the preheated oven for about 60 minutes, or until the center is set. Allow to cool, then refrigerate for at least 4 hours before serving.
