Ingredients

  • 8 pieces Corn tortillas
  • 2 cups Shredded chicken cooked
  • 1 cup Red enchilada sauce
  • 1 cup Shredded cheese Mexican blend
  • 1 cup Sour cream
  • 0.5 cup Chopped cilantro fresh
  • 1 medium Onion chopped

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Heat the tortillas in a skillet until they are warm and pliable.
  3. Fill each tortilla with shredded chicken and roll them up. Place them seam-side down in a baking dish.
  4. Pour the enchilada sauce over the rolled tortillas.
  5. Sprinkle shredded cheese on top.
  6. Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  7. Garnish with chopped cilantro, chopped onion, and a dollop of sour cream before serving.
