- 4 egg whites at room temperature
- 1 cup granulated sugar
- ¼ teaspoon cream of tartar
- 1 teaspoon vanilla extract
Preheat your oven to 225°F (110°C) and line a baking sheet with parchment paper.
In a clean, dry bowl, beat the egg whites with an electric mixer on medium speed until foamy.
Add the cream of tartar and continue to beat until soft peaks form.
Gradually add the sugar, a tablespoon at a time, beating on high speed until stiff, glossy peaks form.
Beat in the vanilla extract.
Drop spoonfuls of the meringue onto the prepared baking sheet.
Bake for 1.5 hours, then turn off the oven and let the meringues cool in the oven with the door slightly open.
