  • 8 eggs
  • ½ cup milk
  • 1 cup grated Parmesan cheese
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 1 small onion, finely chopped
  • 2 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together the eggs, milk, and grated Parmesan cheese. Season with salt and pepper.
  3. Heat the olive oil in an oven-safe skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  4. Add the asparagus to the skillet and cook for another 3-4 minutes, until tender.
  5. Pour the egg mixture into the skillet, making sure the asparagus and onions are evenly distributed.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and golden on top.
  7. Remove from the oven and let it cool slightly before slicing and serving.
