Asparagus Frittata Recipe

- 8 eggs
- ½ cup milk
- 1 cup grated Parmesan cheese
- 1 bunch asparagus, trimmed and cut into 1-inch pieces
- 1 small onion, finely chopped
- 2 tablespoon olive oil
- to taste salt and pepper
Preheat your oven to 375°F (190°C).
In a mixing bowl, whisk together the eggs, milk, and grated Parmesan cheese. Season with salt and pepper.
Heat the olive oil in an oven-safe skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the asparagus to the skillet and cook for another 3-4 minutes, until tender.
Pour the egg mixture into the skillet, making sure the asparagus and onions are evenly distributed.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and golden on top.
Remove from the oven and let it cool slightly before slicing and serving.
