Arugula Pesto Recipe

Main Ingredients
- 2 cups Arugula packed
- ½ cup Parmesan Cheese grated
- ½ cup Olive Oil
- ¼ cup Pine Nuts toasted
- 2 cloves Garlic
- 1 tablespoon Lemon Juice freshly squeezed
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper freshly ground
Combine arugula, Parmesan, pine nuts, garlic, lemon juice, salt, and pepper in a food processor.
Pulse until the mixture is finely chopped.
With the processor running, slowly add olive oil until the pesto is smooth.
Taste and adjust seasoning if needed.
