Filling
- 6 cups sliced apples peeled and cored
- ¾ cup sugar
- 2 tablespoon all-purpose flour
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 tablespoon lemon juice
Crust
- 2 ½ cups all-purpose flour
- 1 teaspoon salt
- 1 cup unsalted butter cold and cubed
- ¼ cup ice water
Preheat oven to 425°F (220°C).
In a large bowl, combine sliced apples, sugar, flour, cinnamon, nutmeg, and lemon juice. Set aside.
In another bowl, mix flour and salt for the crust. Cut in butter until mixture resembles coarse crumbs. Gradually add ice water, tossing with a fork until dough forms a ball.
Divide dough in half. Roll out one half to fit a 9-inch pie dish. Transfer dough to pie dish. Add apple mixture. Roll out remaining dough to place over filling. Trim, seal, and flute edges. Cut slits in top crust.
Bake for 45-50 minutes or until crust is golden brown and filling is bubbly. Cool on a wire rack.
