  • 6 sheets matzo
  • 4 eggs beaten
  • ½ cup sugar
  • ¼ cup vegetable oil
  • 1 teaspoon cinnamon
  • 4 apples peeled, cored, and sliced
  • 1 cup raisins

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Break matzo into pieces and soak in water until soft. Drain and squeeze out excess water.
  3. In a large mixing bowl, combine beaten eggs, sugar, oil, and cinnamon. Mix well.
  4. Add softened matzo, apples, and raisins to the egg mixture. Stir until well combined.
  5. Pour mixture into a greased baking dish.
  6. Bake for 45 minutes or until golden brown and set.
  7. Let cool slightly before serving.
