  • 1 cup Brown Sugar packed
  • ½ cup Granulated Sugar
  • 2 Eggs large
  • 1 teaspoon Vanilla Extract
  • 1 ½ cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoon Salt
  • 3 cups Old-Fashioned Oats
  • 1 cup Apple peeled, cored, and diced

Instructions 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add this to the wet mixture, mixing until just combined.
  5. Stir in the oats and diced apple until evenly distributed.
  6. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are golden brown. Allow cookies to cool on the baking sheet for a few minutes before transferring to a cooling rack.
