Apple Cinnamon Cheesecake

Crust
- 1.5 cups Graham cracker crumbs
- ¼ cup Sugar
- ½ cup Melted butter
Filling
- 3 packages Cream cheese, softened (8 oz each)
- 1 cup Sugar
- 1 teaspoon Vanilla extract
- 3 Eggs
Topping
- 2 cups Thinly sliced apples
- ½ teaspoon Ground cinnamon
- ¼ cup Sugar
Preheat oven to 350°F (175°C).
Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of a springform pan.
In a large bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, beating well after each addition. Pour over crust.
In another bowl, toss apple slices with cinnamon and sugar. Arrange on top of the cheesecake.
Bake for 60 minutes or until the center is set. Cool before removing from the pan. Refrigerate for at least 4 hours before serving.
