Almond Bear Claws Recipe

Ingredients 

Pastry

  • 2 cups all-purpose flour
  • 1 cup unsalted butter cold and cubed
  • ½ cup cold water

Filling

  • 1 cup almond paste
  • ¼ cup sugar
  • 1 large egg white
  • 1 teaspoon vanilla extract

Topping

  • 1 large egg yolk beaten with 1 tablespoon water
  • ¼ cup sliced almonds

Instructions 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine flour and cold butter. Cut butter into flour until mixture resembles coarse crumbs. Gradually add cold water, mixing until dough forms. Wrap dough in plastic wrap and refrigerate for 30 minutes.
  3. In another bowl, mix almond paste, sugar, egg white, and vanilla extract until smooth.
  4. Roll out dough on a floured surface into a rectangle. Spread almond filling over half of the dough. Fold dough over filling and cut into strips. Shape strips into bear claws and place on baking sheet.
  5. Brush bear claws with egg yolk mixture and sprinkle with sliced almonds.
  6. Bake for 15-20 minutes or until golden brown. Cool on a wire rack.
