Al Kabsa Traditional Saudi Rice and Chicken Recipe

Main Ingredients
- 1 whole Chicken cut into pieces
- 2 cups Basmati rice rinsed and soaked
- 1 large Onion chopped
- 3 cloves Garlic minced
- 2 tablespoon Tomato paste
- 2 large Tomatoes chopped
- 1 teaspoon Ground cumin
- 1 teaspoon Ground coriander
- 1 teaspoon Ground cinnamon
- 1 teaspoon Ground black pepper
- 1 teaspoon Ground turmeric
- 1 teaspoon Ground cardamom
- 1 teaspoon Ground cloves
- 1 teaspoon Salt to taste
- 3 cups Chicken broth
- ½ cup Raisins
- ¼ cup Slivered almonds toasted
1. Heat oil in a large pot over medium heat. Add onions and garlic, and cook until softened.
2. Add chicken pieces and cook until browned on all sides.
3. Stir in tomato paste and chopped tomatoes. Cook for a few minutes.
4. Add all the spices and salt. Mix well.
5. Pour in the chicken broth and bring to a boil. Reduce heat, cover, and simmer for 30 minutes.
6. Add the soaked rice, raisins, and toasted almonds. Stir gently to combine.
7. Cover and cook on low heat for another 20-25 minutes, or until the rice is fully cooked and the liquid is absorbed.
8. Fluff the rice with a fork before serving.
