Air Fryer Cauliflower Fried Rice Recipe

Ingredients 

Main Ingredients

  • 1 head Cauliflower riced
  • 2 tablespoon Olive Oil
  • 1 cup Frozen Peas and Carrots thawed
  • 2 cloves Garlic minced
  • 2 tablespoon Soy Sauce low sodium
  • 2 pcs Eggs beaten
  • 2 pcs Green Onions chopped

Instructions 

  1. Preheat your air fryer to 375°F (190°C).
  2. In a mixing bowl, combine riced cauliflower, olive oil, peas and carrots, and minced garlic. Mix well.
  3. Transfer the mixture to the air fryer basket. Cook for 10 minutes, shaking the basket halfway through.
  4. Push the cauliflower mixture to the side of the basket. Pour beaten eggs into the empty side and scramble until cooked.
  5. Mix the scrambled eggs with the cauliflower mixture. Add soy sauce and stir well.
  6. Cook for an additional 3-5 minutes until everything is well combined and heated through.
  7. Garnish with chopped green onions before serving.
