I was going to my very first book club meeting in our new area and everyone was invited to bring treats. Being the baking addict that I am, I decided it was time to try a new recipe! I found cookie dough brownies saved in my baking pins and thought it was the perfect choice! This is the recipe I found: Chocolate Chip Cookie Dough Brownies from the Brown Eyed Baker.

I decided that it needed some tweaks though. You know me, the easier the better!! I’m AAAALLLL about simple! First of all, I feel like you can’t beat boxed brownies. They’re easy and they taste so good! So I replaced the homemade brownie recipe with a boxed brownie. I used the Betty Crocker Supreme Triple Chunk brownie mix and it DID NOT disappoint.

Then I decided that these needed to be topped with something…. FROSTING! Not just any frosting though, FUDGE frosting. The kind that’s so fudge thick and chewy! So I incorporated the fudge recipe from this cookie recipe here. It is INCREDIBLE!

SO HERE IT IS! It was definitely a hit at book club! Also, you’ll be tempted to cut these the size of regular brownies, but DON’T! You’ll never be able to finish one! They are so rich. I recommend cutting them into 1″ x 2″ small rectangles!

Cookie Dough Brownies with Fudge Frosting

Servings 35

Ingredients

BROWNIES

  • 1 box brownie mix and called for ingredients

COOKIE DOUGH

  • 1 cup salted butter, at room temperature
  • 1 cup light brown sugar
  • ½ cup granulated sugar
  • ¼ cup heavy whipping cream
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • cups all-purpose flour
  • 1 cup semisweet chocolate chips

FROSTING

  • 1 cup salted butter
  • 6 Tbs milk
  • 1/4 cup cocoa powder
  • 5 cups powdered sugar

Instructions

BROWNIES

  1. Preheat oven according to brownie instructions.

  2. Prepare a 9x13 baking pan by lining it with parchment paper or foil. (If using foil, spray with non-stick cooking spray. Bake according to instructions on brownie box.

COOKIE DOUGH

  1. While brownies are cooling, mix cookie dough.

  2. Beat together butter and sugars until light and fluffy. Add in heavy cream and vanilla until incorporated. 

  3. Mix in four, salt and chocolate chips. Do not over mix.

  4. Once brownies are completely cooled, spread cookie dough across the top and press down firmly to get a smooth even surface of dough.

FROSTING

  1. Let cookie dough and brownie sit in the refrigerator while you make the frosting to get firm.

  2. Place milk and butter in a microwave safe bowl and microwave in 30 second increments until butter is melted. Mix to make sure the milk and butter are combined.

  3. Add in the cocoa powder and stir.

  4. Slowly add in the powdered sugar and mix to combine.

  5. Spread over the cookie dough on top of the brownie. (HINT: if the frosting is too thick to spread easily, microwave for 20-40 seconds to soften. It can be runny because it will set up thick and fudgey)

P.S. We read the book Wonder this month and it was INCREDIBLE. So eye opening and heart warming. It’s a book everyone and their children should read! You can get it on Amazon here for about $10!
